Spinach Tomato Tortellini

I have been selected to be a blog ambassador for Food, Fight, Write conference in Las Vegas in November. No, I’m not a food blogger. However, food and parties go hand in hand! I make homemade meals for my family every night during the work week. Madison is a very picky eater and with my work schedule, I don’t have time for complicated and time consuming recipes. (Ain’t nobody got time for that! LOL)

So in honor of me going to a food conference I thought I would document everything I make for dinner this week. Every recipe will be easy, quick and kid approved!

Tonight we had Spinach Tomato Tortellini. It is simply delicious!! It takes only 15 minutes to make. So no reason to order take out….that will take longer!

INGREDIENTS

12 ounces tortellini pasta (I used spinach & cheese)

1 1/2 cups heavy cream

2 tablespoons all-purpose flour

1 tablespoon olive oil

3 teaspoons minced garlic

1 (14.5 ounce) can petite diced tomatoes

1 bag of fresh spinach (4 cups)

2 teaspoons dried basil

1 teaspoon dried oregano

1/2 teaspoon dried thyme

Salt and pepper to taste

1/4 cup grated Parmesan

DIRECTIONS

In a large pot of boiling salted water, cook tortellini according to package instructions, then drain.

While tortellini is cooking, whisk together heavy cream and flour in small bowl, set aside.

Heat olive oil in large skillet over medium high heat. Add garlic and cook, stirring frequently. (about 1 minute)

Stir in tomatoes, spinach and seasonings adding salt and pepper to taste. Cook, stirring occasionally, until spinach wilts. (about 2 minutes)

Gradually whisk in heavy cream mixture and Parmesan, and cook, whisking constantly, until slightly thickened about 4 minutes. Stir in tortellini and gently toss to combine.
