Pumpkin Butter

I had the PTO meeting at my house last week. A few weeks ago I was selected as the chairman of the school’s yearly fundraiser. Although I have done tons of parties for clients, I have never done a fundraiser. A project this large needs a lot of help. I have 6 subcommittees for the fundraisers. I was so thrilled to get chairs for each committee. I thought I would “sweeten” the deal by giving each new committee chair a jar of pumpkin butter.

INGREDIENTS:
1 (29 ounce) can pumpkin puree
3/4 cup apple juice
2 teaspoons ground ginger
1/2 teaspoon ground cloves
1 cup white sugar
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
DIRECTIONS:
1. Combine pumpkin, apple juice, spices, and sugar in a large saucepan; stir well. Bring mixture to a boil. Reduce heat, and simmer for 30 minutes or until thickened. Stir frequently.

Transfer to sterile containers and chill in the refrigerator until serving. Store in refrigerator and use within 10 days. 

 

It was so simple to make and so yummy. While it was cooking the whole house spelled like FALL!! The recipe was adapted from All Recipes. The original recipe had 1 1/2 cups of sugar but I thought that seemed like way too much sugar. I only used a cup and thought it was perfect.

To make the pumpkin butter tag~ I printed off Pumpkin Butter on card stock. I stamped a pumpkin on top and colored it in with markers. Used a circle die punch and used a green ink pad around the edges. So simple.
