Pork Chop and Potato Casserole

Tuesday dinner menu was Pork Chop and Potato Casserole and Sauteed Squash and Zucchini. Madison loves the Pork Chop and Potato Casserole…the veggies not so much.

This dish requires at least an hour and 15 minutes to prepare. 15 minutes of prep work than 1 hour in the oven. Tuesday is the only night that we get home before 5 from after school activities so I have more than my usual 30 minutes or less for making dinner.

Six pork chops is best but I only had 4 pork chops so it would have to do. Preheat your oven to 400 degrees.

Brown your pork chops in a skillet with a tablespoon of oil. I season my pork chops before I brown them with seasoned salt and pepper.

Now I seriously doubt you will see this on any other recipe but I use a tablespoon of bacon fat instead of oil. Yes, bacon fat. My mother always saved her bacon grease after she cooked bacon in a mug and kept in the refrigerator. Well, I do the same thing…..don’t judge. LOL It gives food that extra goodness in my opinion!

Thinly slice 4-6 potatoes and lightly season with salt or seasoned salt and pepper and put in bottom of a 9×13 pan. Chop an onion on top of potatoes. Put browned pork chops on top of potatoes and onions. Mix 1 cup of milk with a can of cream of mushroom soup and pour on top of pork chops.

Bake at 400 degrees for 30 minutes. Then put grated cheddar cheese on top and bake for another 30 minutes.

When it’s done you have your meat and potatoes ready just add a side of veggies!

Pork Chop and Potato Casserole

Ingredients

1 tablespoon of vegetable oil….(or bacon fat)

6 boneless pork chops

1 can cream of mushroom soup

1 cup of milk

4-6 thinly sliced potatoes

1 small chopped onion

2 cups of shredded cheese

Pepper and salt to season potatoes/pork chops

Directions

Preheat oven to 400 degrees. Heat oil in a large pan over medium high heat. Season pork chops with season salt and pepper . Brown pork chops.

In a small bowl, mix the soup and milk. Put sliced potatoes in a 9×13 baking dish. Put chopped onions on top of potatoes, add pork chops and pour soup mixture over the top. Bake uncovered at 400 degrees for 30 minutes. Then sprinkle cheese on top and bake uncovered for 30 more minutes.
